Zia (Aunt) Rosa is really “Queen of the Kitchen.” She was the oldest girl and in charge of cooking for her family of nine.
INGREDIENTS
– 1 lb. fish (snapper, whitefish or trout), cut lengthwise and boned
– 1/2 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 1/4 cup fresh parsley, chopped
– 1/2 cup chopped pitted Kalamata olives
– 2 Tbsp butter
– 2 cloves garlic, chopped
– salt and pepper
– garlic powder
– optional: paprika
DIRECTIONS
Preheat oven to 375°F.
Cut a length of aluminum foil about 20” long and spray with cooking spray.
Mix all ingredients (except for fish, garlic powder and paprika) in a bowl and then spread by the spoonful on the fish.
Roll up the fish and place in center of the foil.
Dot top with butter, garlic powder and paprika.
Seal the aluminum foil and roast the fish for 25 minutes.
Open packet to brown the fish for about another 10 minutes.
