wakame cucumber salad

ingredients:

1/4 cup wakame seaweed, soaked in cold water for 5-10 minutes, drained and chopped
2 cucumbers, peeled, seeded, and thinly sliced
2 oranges, thinly sliced
1 Tbsp sesame seeds
1/2 cup chopped cilantro
2 Tbsp rice vinegar
2 Tbsp mirin
2 tsp soy sauce or tamari
1 Tbsp maple syrup

directions:

In a small bowl, mix mirin, rice vinegar, soy sauce and maple syrup. Add to the bowl the cucumbers, oranges, sesame seeds, cilantro and wakame. Toss to combine.
Serves 6.
