mediterranean chopped salad
Healthy, delicious, and a stunner on the dining table, this Mediterranean choppedsalad is always a winner.
Ingredients:
2 cucumbers, diced
1 red bell pepper, diced,
2 cups of cherry tomatoes, halved
1/2 medium red onion, finely diced
1 cup chick peas, canned-ready to eat, drained and rinsed
1/2 cup kalamata olives, pitted
1/2 tspn each of oregano, basil, rosemary and thyme
1/4 cup extra virgin olive oil (or avocado oil)
1 cup feta, crumbled
Directions:
Thoroughly combine all the ingredients in a mixing bowl. Refrigerate for at leas one to two hours, or overnight. Add a pinch of sea salt and freshly ground pepper before serving.
